Say you tackle a boss at level 15, would it still take the same amount of damage to defeat it if you went and did it at level 100?? Is there some sort of pregression like that or do they have a set hp?
I know levels aren't the main thing, just curious

Enemy stats (including HP) are fixed based on the playthrough. All enemy stats increase on each subsequent playthrough (up to 7 or 8 times, then its always the same). Its never relative to your level.

I doubt it. Take for example the enmies at Firelink: One swing and they are down. Down in the Depths it takes 2 hits. So I guess the HP and everything are area dependant. But there are not such big jumps like in other RPG's. Neither in Enemy Hp nor in Weapon Damage. The scale is set high and increases steadily. That's at least my experience.
NG+ is a different thing. There is a jump in initial toughness and then the same steady improvement (i guess...I'm far from NG+)

Cheers for the reply, i was just thinking back to oblivion and that was harder the higher level you were taking down the gates, thanks

Your first New Game+ will increase as follows it does depend on the enemy
Health Values: 1.5x - 2.5x
Attack: 1.3x - 2.3x
Defense: unchanged - 1.6x
From your 2nd to your 6th NG+ (your 7th playthrough)
All values get an additional 1.07x - 1.25x
1st playthrough = Base
(NG+) 1.5x - 2.5x
3rd: 1.57x - 2.75x
4th: 1.64x - 3x
5th: 1.71x - 3.25x
6th: 1.78x - 3.5x
7th and On: 1.85x - 3.75x
So in short your hardest time will be on your first NG+ due to its drastically high jump compared to the following 5 afterwards. Eventually your Health wont matter and the game does indeed come down to a strategy of not getting hit and the smallest of enemies 1 blowing you all the time.
