Assassin's Creed 2.
I have Xbox LIVE but I never bother putting my ethernet cable into the Xbox so this was my first only game where it was completely 100% offline achievements.

Retail - Assassins Creed - Yes! I hunted high and low, with the assistance of a printed map, for all of the flags. The Wife was in hospital at the time and it kept my mind off of things.
Arcade - Castlevania SOTN - Fantastic game, thoroughly enjoyed 100%ing it.

Fallout 3 1550gs, I was determined to get it finished all the way. I can't say the same for New Vegas:/ But my first 100% would have to be either one of the Gta games or old old gen games, Spyro or Crash Bandicoot.
