Re-spawning Nirnroot (Amongst other things)

Inside Castle Volkihar (with Dawnguard DLC), there are two Nirnroots (one in a locked display and another on a dead alchemist). After a few days the entire house respawns so you can get all the items again (including Nirnroot).

This is the only re-spawning nirnroot that I'm aware of.

Also, there are lots of bookshelves with many rare books. They too respawn after a while. Also daedra heart, bone hawk amulet, potions of blood, etc....

Lots of good stuff!

I thought wild nirnroot respawn? I'm positive I've collected the same nirnroot in Morthal a few times.

Nirnroot does actually respawn in Skyrim. It didn't in Oblivion and most books about nirnroot in both Skyrim and Oblivion say that it doesn't regrow even though it does.

They do "grow back" but it takes awhile.

From a Skyrim website... While in-game text claims that nirnroot does not regrow, it actually does regrow normally like other plants. http://www.uesp.net/wiki/Skyrim:Nirnroot

I never actually read that article (although I frequent uesp.net). As a matter of fact, I never really double checked any 'wild' nirnroot that I've collected to check for regrowth.
