Str/Faith Shield?

I'm looking for a shield to focus on leveling for my Str/Faith Knight. I have most that have been mentioned on these forums (I'm upto Anor Lando on NG). I'm looking at Balder, Grass Crest and Dragon Crest shields as they're not too heavy (max 4.0 weight if pos)

...Or does it not really matter which one? Any recommendations?

I was also wondering, if I descend a weapon, do you get back the ember used to ascend it or is it lost? (Divine ember in this case)

Thanks for all answers guys

Also, any heavy sword recommendations? I'm using a +3 Black Knight Sword right now which is AWESOME. I'm currently levelling a Greatsword to enchant it, but its very heavy...

+14 Balder for 100phys. def and 74 stability
Crest Shield for magic def.
Dragon crest for fire def
Effigy shield for lightning def
Bloodshield for bleed defense (against bleed weapon users)
Grass Crest Shield for stamina regen

That's about it.

Also, Heater shield is amazing. It offers a decent amount of fire def, 100 physical def and it has ~70 stability at +14, and only weighs 2.0. Though it looks like crap

+15 Claymore IMO is the best Greatsword in the game, if you're either a Dex or Str heavy character. Both stats have "C" scale, so you win either way, and it only weighs 6.0, that is just too good to be true, honestly. The True Greatsword of Artorias is a great weapon, though it requires a lot of stats to actually deal good damage. But once you level up and use it. Damage is in the 700-800 zone when two-handing it.
