Mafia 2 had a great soundtrack as it really fit the setting and time period of it well.

I also enjoyed the soundtrack for Dead Rising 2 during the psychopath battles.

I was a little upset when I found out that Halo 4 wasn't going to have the same composer, since the music of the game is such a huge part of setting the atmosphere. However I understand them trying to make it their own, and I really did end up enjoying the Halo 4 soundtrack more than I expected I would.

For me it's easy. My "triforce" of games: Legend of Zelda: Ocarina of Time, Final Fantasty VII, and Halo: Combat Evolved. Skyrim is definitely up there, that music was fantastic, and honestly, so is Minecraft. Hands-down some of the most peaceful (and somehow sad) music I've ever heard.

Doom definitely had the best music of any fps ever, still does. Kind of hard to beat these perfect pieces.

Unreal's music has always been pretty badass too. I think most of my favorites come from the SNES era of gaming though. Far to many great soundtracks to list.
