Can be done with two controllers.
When you receive the kickoff with controller one, start out running to either the left or right side of the field. When the defenders close in around you, go back and run to the other side of the field. You should be able to run around the remaining defenders now.
Make sure you don't use all your boost right away or you will end up running out when you get close to the end zone and they will tackle you. Save most of the boost for when you are running for the touchdown with almost no one in front of you or when they are close to tackling you.
