Very easy. I took me 15 fights (going 15-0) to get a title shot. As soon as I won it, I had the chance to move up in a weight class in order to fight someone else and I did. Dont worry though, You simply jump back and forth between weight classes, My next fight was a must have title defense.

It shouldnt take long for you to earn that second title if you do this.

I'm HW right now with the title. In order to get this achievement do I have to wait for a "New Divison", "Title" fight at the same time or are you supposed to jump to a different weight class with a "New Division" fight and then fight a couple times to fight for that title?

I am the light heavyweight champ now and i have an opportunity to fight anderson silva at middle weight (he is not the champ). Will I lose my belt at LHW or can I fight in both and win both belts at the same time?

Did it in three classes. Two-time Featherweight champ, one-time Lightweight champ, won the Bantamweight title on my 47th fight, defended it once then retired.
