Step 1: Veteran Difficulty
I would highly suggest finding a co-op partner to play all aspects of steps one and two. It makes the game more fun, and easier. When you are playing through the game, be sure to use the guides for the treasures, eggs and BSAA Emblems. Also work on killing enemies with the prompts (20 needed). There are many other "random" achievements that you might be able to pick up at this time, but I wouldn't worry about them much. You can use chapter select and find the best places for them later, in Step 4. Purchase all outfits after you finish the game.
Step 2: Professional Difficulty
Once you've beat the game on Veteran you'll unlock Professional. If you've fully upgraded a weapon and have enough exchange points, be sure to unlock unlimited ammo for one of your better guns. A magnum is usually the best choice. Beat the game a second time now.
If you have a friend who has already unlocked this step, you can join their co-op game to skip Step 1 completely.
Step 3: S-Ranks/Farming
Again put the difficulty down to Amateur and use chapter select to gain an S-Rank in any chapter you weren't able to do so in steps one and two. Grab any treasures you don't have to go out of your way for to help with step five. Purchase all action figures after you have all S-ranks.
Step 4: Weapon/Environment Achievements
Using chapter select, view all the achievements for getting kills with certain weapons/in certain ways (including "Bad Blood"), shooting barrels, deflecting arrows, etc. and knock those out on an Amateur.
Step 5: Take it to the Max
Your last task will be to purchase and max out all the weapons. You can either exploit the egg glitch or use one of the other methods in the "Take it to the Max" achievement description for this.
Step 6: Online Versus
This DLC is all completely online, and includes 4 different playable games. There are 2 achievements for each game, and two other achievements that require you to unlock all playable characters, and another for defeating 100 enemies with melee attacks. Only 4 people are required to boost this, so finding players in the Achievement Trading Thread won't be too hard.
Step 7: Lost in Nightmares:
With only 5 achievements this DLC is short and sweet. The story only takes a couple of hours, so it can be done quick. There are collectibles, though, so check out this thread for their locations. You'll earn 3 different achievement for completing the story; Must've Got Lost, It's Just a Bad Dream and Night Terrors. During your fight with Wesker, if you inflict enough damage onto him, you'll unlock Kung Fu Fighting. This is best done on Normal, as he tends to run off early on Amateur.
Step 8: Desperate Escape
This DLC also includes 5 achievements. There are 3 achievements that you'll unlock regarding the story aspect; Getaway, The Great Escape and Run the Gauntlet. For killing 150 enemies in one run, you can take your partner's weapon and receive all kills. This can be done on Amateur. You'll unlock Way of the Warrior. For Shoot the Messenger, you'll need to kill 3 Agitator Majini in one run. These are the guys that carry the megaphone. There's a cutscene that occurs when they appear.
Summary
At this point you should be done. Anything left would fall in "Step 4" and you just need to knock those out with chapter select. Aside from how difficult and frustrating the boss battles become in Professional difficulty, this isn't really a hard game to get 1400 points in. If you unlock unlimited ammo, things go much more smoothly, especially if you do a speed run and unlock the unlimited rocket ammo.
